where do I buy fresh ducks or geese? Organic would be fantastic but I'd be happy with a good-quality fresh bird (not frozen)! I'm in the Amsterdam/Leiden area, and I have access to Sligro etc. Are there any of the Amsterdam markets where you can buy fresh birds and/or order them for pick-up a few days before Christmas? Any recommendations?

There's a poultry specialist (Jonk Specialiteiten) on the Haarlemmerdijk...they have every kind of bird imaginable, and i think it's all organic:
