Instead of intensive language classes, which seem to overwhelm me, I'm wondering which classes would be best for someone who only has one language and isn't very confident or skilled at language acquisition?

It depends where you live! If you are living in the The Hague or Delft area, I would recommend the Moindriaan classes ( the former "Taalplus") which were also addressed to people who cannot read nor write and which are reasonably "slow"(at least they were a few years ago)..
