I'm considering driving to the Cote d'Azur this summer rather than fly. I know French highways are full of toll roads- anyone know how much they cost (approximately) going from the Luxembourg border to Antibes and back?

It will cost you 62.20 euros each way in tolls if you stick to the auto-routes.
